For the second year in a row, the Office of Campus Sustainability, Campus Auxiliary Services, and Sodexo celebrated National Kale Day on Wednesday, October 7. Local kale from Buzzanco Farm in Kingston, NY was served in 12 dishes at both Hasbrouck Dining Hall and the Student Union. Dishes included kale pizza, kale soup, cheese-tomato-kale flatbread, pasta with kale, leafy green kale salad, and a cold braised corn, black bean, kale salad.
Last year’s Kale Day was so successful that kale became a part of the meal rotation at Hasbrouck Dining Hall.
