You'll find details about major and concentrations here and about the minor here. Any full-time Anthropology faculty member (directory here) would be happy to meet with you to go over the details and answer your questions.

If you are ready to proceed, please email Anthropology@newpaltz.edu with the following information: your name, your year at New Paltz, your interests (in and beyond Anthropology), and a few sentences about why you are interested in pursuing an Anthropology major or minor at New Paltz. Within a day or two, we'll get back to you to schedule a short meeting to go over the details, address your questions, and formally enroll you.
